Americans daily face conflicting information related to health and nutrition. In this course, students will analyze the many issues consumers face when purchasing food, investigate how diet and lifestyle impact health, and learn about the role of major nutrients and phytonutrients. Different dietary philosophies as well as the political and financial influences of food will be discussed. Students will maintain and learn to analyze personal diet diaries as a tool to understand class material.
