Part One:
Keep
a diet diary for 3 day using Nutrition Calc Plus or any other food composition
source. Be sure to include at least one
weekend day, the days do not have to be sequential, but it helps when looking
for trends. For each entry, approximate
portion size, ingredients, etc. Include
all beverages, snacks and meals. Do not
include any supplements when tracking daily food/beverage intake, which will be
considered separately.
Part Two:

Note
the totals of the daily intake of each nutrient [Calcium, Iron, Magnesium,
Potassium, Phosphorus, Sodium & Zinc].

Find
the difference between your intake and the amounts from your profile page. Please include a copy of this page with your
assignment.
ü
Print
out the appropriate charts to submit – make sure they show the nutrient amounts
[the bar graph or spreadsheet might be most appropriate]
Part Three:
On
a separate sheet of paper, type your answers to the following:
- Review your diet
diaries. Comment on the amount
suggested by your profile page, and the Dietary Reference Intake [DRI]
level, are they equivalent? Charts
can be found in the front and back covers of text, and the chart on the
last page of the textbook.
Determine your individual needs for each nutrient, and indicate if
your daily individual intake met or was out of range for these.
- Note if you take
supplements what impact they have on your daily nutrient levels i.e. do
they bring you into the correct range, do you not need to take them,
etc. What about ratios? Comment on your Ca:Mg and Na:K ratios. [Hint: If you need to
– look up recommended ratios in text]
- Average your intake of
each nutrient over the three days, and comment on how this amount compares
to the DRIs or your profile?
(Remember the DRIs were originally set based on three-day averages) Again, if you take supplements comment
on the impact they have on your average nutrient levels i.e. do they bring
you into the correct range, do you not need to take them, etc.
- What foods and /or
preparation practices could be changed [in what way] to modify your
nutrient intakes?
For
the following question, you may have to do some additional reading – if you use
any source outside of the textbook/class notes, please be sure to indicate the
source.
- Ilene is a vegan. She stopped eating meat and dairy
products when she was 17 yrs old, and is now in her mid 20s. She wants to start a family but is
concerned about whether she can obtain enough calcium and other nutrients
from her diet to ensure her baby’s growth and health. She is also concerned about
osteoporosis. How can she consume enough calcium to meet her own and her
baby’s needs? Which other
nutrients should she be concerned about? Please list them with a brief
comment about why you included them.
