Write a self-evaluation discussing your reactions to how that teaching proceeded. Discuss (1) how well you met your expectations; (2) what didn't go well and why; (3) what you would do differently another time; (4) how you think the lesson would work with grades K-8 students and any other issues. Since these written self-evaluations are a chance to reflect upon your evolving teaching styles and skills at this point in time, and to help you focus on what you will work on in the coming months, the self-evaluation should be honest and thoughtful. They are an important part of becoming a reflective practitioner.
As a part of your portfolio, they could show evidence of growth over time.
In addition keep notes and a brief reflection of each class.
